Squash Cake

4 Eggs
1 2/3 cup Sugar
1 cup Vegetable oil, (or 1/2 cup oil & 1/2 cup applesauce)
1 3/4 cup Mashed cooked winter squash
2 cup Flour
2 tsp Baking powder
1 tsp Baking soda
1 tsp Salt
2 tsp Cinnamon
1/2 tsp Nutmeg

Beat eggs, add sugar, oil, and squash, and mix well. Sift together dry ingredients and thoroughly mix into squash mixture. Fill two buttered loaf pans and bake in a 350 degree oven for 25-30 minutes.

You can also add raisins and nuts if you like.
