Steamed Cauliflower with Thyme Vinaigrette

1                 Head of cauliflower
1 tsp           Granulated sugar
3 tbsp         White wine vinegar
1                 Clove garlic, minced
2 tsp           Dried thyme
1/4 tsp        Salt and pepper
2 tsp           Dijon mustard
1/3 cup       Extra virgin olive oil

Core cauliflower; steam for 10 to 15 min. or until tender-crisp. Place in shallow bowl.

In small bowl, whisk together vinegar, thyme, mustard, sugar, garlic, salt and pepper; gradually whisk in oil. Drizzle over cauliflower. Serve warm or at room temperature.

For even cooking of whole head of cauliflower, trim off all leaves and hollow out the stem right up into the head.
