Orange Herb Yogurt dressing

1 tsp               Orange peel, finely grated
2 tbsp             Orange juice
1                     Garlic clove, crushed
1/4 cup           Sunflower oil
1/2 cup           Plain yogurt
2 tsp               Fresh rosemary, chopped
2 tsp               Fresh cilantro, chopped
2 tsp               Fresh parsley, chopped

In a small bowl, beat orange peel and juice, garlic and sunflower oil with a wooden spoon until well blended. Stir in yogurt. Cover with plastic wrap and refrigerate. Just before using, stir in chopped herbs.

This light dressing may be served with sliced beets or chopped cucumber, with potato and cooked vegetable salad, or any curried dish.
