Peperoni Fritti

Cut six peppers in half and remove the seeds. Cut them in half again lengthwise and dip them in this batter:

2 tbsp Flour
1 Egg yolk
1 tbsp Olive oil
3 tbsp Water
A pinch of salt & pepper

Make a well in the flour. Add egg and oil, mix and start stirring in the flour. Add water and salt & pepper until the batter is like thick cream.

Deep fry the slices of pepper in this batter and serve with the following sauce:

1 Small onion, chopped
1 Clove garlic, chopped
8 Chopped tomatoes
Salt and pepper
1 tsp Chopped basil

Fry onion and garlic in olive oil. When cooked, add tomatoes, salt & pepper, and basil.
