Almond Yogurt Dressing

1/3 cup      Ground almonds
2 cloves     Garlic, crushed
1/4 tsp       Salt
1/2 tsp       Pepper
1 tsp          Grated lime peel
1/4 cup      Almond oil
2 tbsp        Dry white wine
1/2 cup      Low-fat plain yogurt
2 tsp          Fresh lovage, chopped
2 tsp          Fresh oregano, chopped
2 tsp          Fresh parsley, chopped

In a small bowl, combine ground almonds, garlic, salt, pepper, lime peel and almond oil with a wooden spoon. Beat in wine and yogurt until well blended. Cover with plastic wrap and refrigerate. Just before using, stir in chopped herbs.

Serve with grated carrot and celery root salad, cooked green beans or rice and pasta salads containing meat or fish.
