Asian Chicken and Cabbage Slaw

2 lbs           Cooked  boneless chicken, cut into bites
2 cups        Shredded cabbage and carrots
1/2 cup       Thinly sliced green onion
1/2 cup       Thinly sliced fresh mint leaves

Lime dressing:  whisk together
3 tbsp         Fresh lime juice
3 tbsp         Asian fish sauce
3 tbsp         Salad oil
2 tbsp         Finely chopped jalapeno chilies
1 tbsp         Rice wine vinegar
4 tsp           Sugar
1 1/2 tsp     Minced garlic
1/2 tsp        Grated lime peel
1/4 tsp        Pepper

Marinate chicken in 1/4 cup of the lime dressing for 1/2 an hour. Toss all ingredients and serve.

Absolutely delicious and keeps for a day or two in the fridge quite nicely…(if it lasts that long!)
