Leeks with Grapefruit Dressing

2             Leeks

                 Juice of 1 grapefruit
1 tbsp      Chopped chives
2 tbsp      Red wine vinegar
4 tbsp      Extra virgin olive oil
                 Salt and freshly ground pepper
1               Pink grapefruit

Wash; trim leeks, keeping only the white and light green parts, discarding the rest.

In a med. pot of boiling salted water, blanch Leeks 5-8 min, then refresh in ice water bath.

Cut leeks into quarters, lengthwise.

Mix dressing, grapefruit juice, chives, vinegar, oil and salt and pepper to taste. Place leeks on plate; cover with dressing garnish with grapefruit sections.
