Perky Carrot Salad

3 cup     Grated carrots
1 cup      Grated apples
1 tbsp     Lemon juice
1/2 cup   Thinly sliced celery

Add lemon juice to apples as soon as they are grated to prevent browning.

Dress with oil, lemon juice and yogurt or sour cream, chopped dill, parsley and about ½ t. of dried horseradish.
