Kielbasa with Two Cabbages

1 lb.               Kielbasa, cut diagonally in 1”
2 Tbsp          Veggie oil
3 cups           Sliced red cabbage
1 1/2 cups    Sliced onion
1 can             Sauerkraut, drained (16 oz.)
1 cup             Apple juice or beer
6 cups           Uncooked extra wide egg noodles (8 oz.)

In a large skillet brown kielbasa in oil about 5 min. Remove to plate and keep warm. Add red cabbage and onion to skillet. Cook, stirring often until cabbage begins to wilt about 10 min. Add sauerkraut, apple juice or beer and kielbasa. Mix to combine. Simmer 10 min. Cook noodles, drain. Toss with cabbage and kielbasa.
