Roasted Lamb with Persillade

1/2 cup          Fresh parsley, chopped
1/2 cup          Fresh bread crumbs
1 tbsp            Garlic, minced
2 tbsp            Olive oil

Combine all of the above ingredients.

Press mixture onto a rack of lamb or a small leg roast. Roast as per usual instructions, about 15 mins per pound in a 375 deg F oven.
